June 5, 1922 – April 18, 2024
Evelyn H. Probst, 101, of O'Fallon, Illinois, formerly of Ramsey, IL passed away Thursday, April 18, 2024, after a short stay at Clinton Manor Living Center in New Baden, IL. She had resided with her daughter Gail in O'Fallon for the last 6 years.
Services will be held on Saturday, April 27, 2024, at the First Church of God in Vandalia, IL. Visitation will be held from 9:30 AM until the service time at 11:00 AM with Rev. Zach Schaeffer and Pastor Charles Miller officiating. Burial will follow at Glendale Cemetery, Fillmore, IL.
Memorials: First Church of God, Vandalia, IL and/or Ramsey High School Home Economics Department (a part of the FACS Family and Consumer Science Department) or the charity of your choice.

Evelyn was born June 5, 1922, in Shafter Township, IL, the daughter of Albert & Minnie Henrietta (Kresin) Hoffman. She married John Earl Probst on January 22, 1942, in Troy, MO. He passed away on June 27, 2000. Evelyn was a homemaker as well as fulfilling the many tasks required of a farmer's wife.
They lived and raised their family in rural Bingham, IL until they moved to Ramsey in 1996.
Evelyn loved spending time with her family and many dear friends. She enjoyed Home Extension (now HCE Home and Community Education) for over 80 years and was honored to give a speech at Fayette County HEA anniversary celebration last summer.
Evelyn enjoyed cooking (known for her noodles), sharing helpful hints, gardening and sewing. It was told that people of Ramsey would drive by her house just to see her flowers.
She was known for her sharp mind and quick wit that continued until the very end of her journey here on earth. When someone commented on how nice she looked she would reply with her sweet smile "a little powder and a little paint, makes a girl, what she ain't"
She was a long-time active member of the Canaan Chapel Church of God, rural Bingham, IL, then First Church of God, Vandalia, IL. Her deep faith sustained her, and her sweet spirit was a constant witness to others.
She loved well and was well loved.
Survived by: Son - Gary Probst & Concepcion, Vandalia, IL; Daughters - Connie Weller, Cottage Hills, IL and Gail Greer, O'Fallon, IL; 8 Grandchildren - David Weller, Lori Ahlers & Doug, Mark Weller & Jennifer, Aaron, Daniel, and Timothy Probst, Gennifer Day, Grant Greer; 14 Great Grandchildren - Jackson, Brennan, Rowan, Sutton, Emerson, Andrew Ahlers & Michelle, Tori Spaulding & David, Keaton, Jalen, and Tevin Weller, Adelyn, Mallory, Camille, Peyton; 3 Great Great Grandchildren - Madelyn, Ali, Eli, and 2 on the way; Sister-in-Law - Arlene Hoffman, Vandalia, IL.
Preceded in death by: Parents; Husband; Brother - Wendell Hoffman; Sister - May Della Probst; Brother-in-Law - Paul Probst.
